This batch is eight months old now, and it's been racked once. When I last sampled it two months ago, it was roughly underdeveloped but showed promise. Now, the nose is still caramel and "meady." A lazy night at home waiting for the new Who to download...

I tasted my home batches back in early February, then gasped in horror as I opened the brew closet in March to see dried out airlocks. Here we go...

Let's see, the only thing brewing-related that happened while my computer was down was I racked the wildflower mead from a 6-gal to a 5-gal. It's still really dark, and looks like caramel ice cream topping. I can't wait to see what it tastes like. I'm glad I decided not to dump the elderberries into this one ( Read more... )

I got home from work this morning, made some pancakes, ate some pancakes, took a shower, and was headed for bed when I heard a loud hissing noise. This was going to be a batch of elderberry melomel, but when I opened and tasted the honey, I decided to make a straight mead instead. It's darker than any honey I've ever brewed with, and has an overwhelmingly strong caramel taste. I have a gut feeling that it wouldn't go well with elderberry, so I'm saving the elderberry base I have and will brew ( Read more... )
